Ya know, it's long hours, but it's less physically demanding than just being a cook for 8 hours out of the day. It's more variety: cooking, office work, filling in where needed, & planning, improvising, etc. It's my job to provide the framework for how things should run, and ensure that it actually happens. It's great to create food and menus, and involve my staff in the process.
