Swiss tournament seems like a great way to go for an outwitters tournament. Here are a few ideas:

* 1pt for p1 win and 2pt for p2 win
* each match between two players includes 2 games on the same map with each player being p1 for one game
* match up a pair of players only once in the initial normal rounds
* each pairing should have similar accumulative scores
* after the initial rounds, simply match 1st with 2nd, 3rd with 4th, etc regardless of whether they played before
* stop when the top N spots are stable with different scores
