10-12 as a chef? Woo man, I bet that's hectic..

Ya know, it's long hours, but it's less physically demanding than just being a cook for 8 hours out of the day. It's more variety: cooking, office work, filling in where needed, & planning, improvising, etc. It's my job to provide the framework for how things should run, and ensure that it actually happens. It's great to create food and menus, and involve my staff in the process.

Thanks for the excuse to rant/explain in a positive way, .Memories..
